Roasted Strawberry Ice Cream
organic heavy cream
preferably whole, but I use 1%
sees, scraped from the pod
hulled and sliced
Preheat oven to 400. Prepare strawberries and place on sheet pan. Roast in the oven for 20 minutes.
Whisk together cream, milk, sugar, salt and vanilla bean.
Scrape the strawberries and all juices, caramelization and basically everything off the sheet pan into the ice cream base.
Pour mixer into frozen bowl of ice cream maker and spin until solid, 20-25 minutes.
Quickly scoop ice cream into a metal loaf pan and freeze until solid (couple of hours usually). Enjoy!
